Anova has a new sous-vide connected, the Anova Precision Cooker Pro, which extends its easy-to-use cookware for professional chefs and prosumers. Designed to be more powerful and stable when cooking larger meals, it also promises to be tough enough to cope with a busy professional kitchen.
Sous-vide depends on precise temperature control and a more scientific approach to cooking. The Precision Cooker Pro marks a boomerang of sous-vide technology, again in professional kitchens. Sous-vide started as a toy only for professional chefs, since the hardware to maintain stable temperatures in the water baths was very expensive and large.
The Precision Cooker Pro is distinguished from the range of consumers of Anova with an increase in power. It is a unit of 1,200 watts, with a flow rate of 12 liters per minute. It can handle bath sizes of up to 100 liters plus 26 gallons with lids.
It is made of aluminum and stainless steel, and has been given a Teflon coating. Anova says it has an IPX-7 durability rating, including kitchen-suitable fall tests, and has a two-year warranty. It can withstand total immersion in water for up to 30 minutes.
