Achari BBQ | Grilled Chicken coated in a pickling spice | Kravings This time I'm in a pickle lol. I love the taste of a pickle. For those that aren't familiar with the Indian style of pickling, it's different from a North American style one. In India spices are ground together with chilies and lemon or vinegar is used to preserve a variety of vegetables, shrimp, fish and even beef! Of course like our vast country the styles of pickles vary from the fiery reds to mellow yellows and everything in between.

Achar in Hindi means pickle or to pickle and this combination of flavours has been extended to the Achari Chicken or Murg Achari - recipe here - a gravy version and this delightful recipe where you use a pickling spice in the marinade and then smoke it on the BBQ.

Here are the ingredients and steps to make this recipe!

Achari Kebab

Achari Marinade
5 Kashmiri Chillies
1 tbsp Fennel seeds
1 tbsp Fenugreek seeds
1 tbsp black Mustard seeds
1 tbsp black Onion seeds
1 tbsp Cumin seeds
2 tbsps ground Ginger and Garlic paste
2 tbsps Oil
3 tbsps Mustard Oil
1/4 cup Curry leaves
1/2 tsp Turmeric
1 tbsp Tomato paste
1/4 cup Water

2 lbs boneless Chicken thigh
Salt to taste
Sprinkle of Fennel, Cumin & black Onion seeds
Lemon wedges
Onion quarters
2 tbsps regular & Mustard Oil mixed for basting

Lightly toast the dried chillies and all the whole spice seeds
Cool and going to a powder, add the ginger and garlic paste and 1 tbsps of the regular oil and 2 of the mustard oil and grind with a little water if too dry
In a saute pan heat up the rest of the oils and add the curry leaves and ground paste
Add turmeric and the tomato paste and the water and cook for a minute or so and allow to cool completely
Cut the chicken into cubes and add the achari masala and marinate it overnight
Skewer this with some wedges of lemon and quarters of onion
Sprinkle with some fennel, cumin & black onion seeds
Heat the BBQ and grill it on one side before flipping it over o all sides to cook
In between baste with a mixture of regular and mustard oil
