I finally think I've calibrated it to be a good difficulty. Beating the AI is very possible, but it takes a great amount of concentration and luck. As you can see from this GP, it's pretty much impossible to win every race. My goal was to get first overall, and although by the end I was well in first, the AI gave me a run for my money, especially toward the beginning.
I recommend trying this for yourself, but it's not the easiest to set up,and I don't recommend it for people who aren't too familiar with altering the SuperTuxKart files (too risky).
I have a pre-made file that makes most of the adjustments for you:
Replace your original kart_characteristics.xml file with this file (keep the original of course!). Then go to the karts folder. Go to the kart.xml of the character you choose and add " (edit)" to the weight class. For example, if you want to use Tux, go to Tux's kart.xml file and change "medium" to "medium (edit)". And backup the original as always. ;)
You might also want to backup your highscores.xml file if you don't want your leaderboard to be filled with hacked times.
If you're wondering about how it works, the idea is to give everyone 1.5x speed and give the AI an additional 1.25x speed on top of the 1.5x speed. The AIs' turn radii is also lowered by 0.5x. Changing all of this is made more difficult by the fact that you can't simply change the characteristics of just the AI. This is why you have to put yourself in a custom weight class. This is probably easier to do if you actually alter the STK code, but I am not good with programming.
